The Weaning Diaries | Tuna and vegetable quiche recipe

This week we’ve been cooking and today’s choice was quiche. I was at my friend’s house earlier in the week and she was saying how much her baby loves quiche, so decided I’d let Austin have a go. We normally spoon feed and I generally give him just finger food like toast and sandwiches alongside, but thought he’d really love this – and he did!

We decided to make tuna and vegetable quiche and it was honestly one of the quickest and easiest things I’ve ever whipped up. I made enough mixture for two quiches and I froze half of the mixture. Here’s how we did it:

  • Make pastry or buy a ready made pastry case (we did the latter)
  • Whisk 3 eggs with 350ml milk. We ran out of milk (oops) so used formula this time
  • Processed with VSCOcamWhizz up a large handful of spinach and add to egg mixture along with a few whole leaves
  • Add 100g full fat cheddar and 1 tin of tuna
  • Chop a stalk of asparagus and an inch of courgette, layer in the bottom of the pastry caseProcessed with VSCOcam
  • If it looks like a bowl of vomit, you’ve got it spot onProcessed with VSCOcam
  • Pour half the mixture into the pastry case on top of courgette and asparagus
  • Add a sprinkle of cheese on top plus a pinch of mixed herbsProcessed with VSCOcam
  • Cook in the oven – I put on 170 degrees (fan) for about 40 minutes – or until cooked through
  • Enjoy!

Processed with VSCOcamAs I said this makes enough for 2 quiches, so I froze the rest of the mixture in a zip lock freezer bag. If you don’t want to do that, just half the mixture recipe.

Austin really enjoyed eating the quiche – it was a total mess but I’m very glad to have made it – he’ll get a piece for lunch or supper each day until it’s gone. I was going to steal some for my own tea then remembered I used formula 😦 #badtimes

    I tried out a recipe this week for a cheese and red lentil slice which was very similar to a quiche and my little one loved it.

  2. Quiche is definitely a favourite around here, so quick and easy to make. But, I’ll never look at the bowl the same way again – a bowl of vomit – ahhhhh, why did you have to make me think of that! haha!
